(IN BRIEF) GEA has introduced the Bake Extruder at IBA 2025, a versatile, high-speed system for medium-to-large biscuit producers. The modular extruder handles wirecut, co-extruded, filled, and continuous products, delivering up to 350 wirecut strokes per minute or as many as 250 cuts per minute in continuous mode. Brushless motors and servo controls ensure precise extrusion and uniform slices, while optional lobe pumps handle aerated or inclusion-heavy doughs. The new HMI supports ERP integration and predictive maintenance, and hygienic design features a removable hopper, open head, and easy-access components for fast, compliant cleaning. Designed from extensive customer input, the Bake Extruder boosts productivity, product variety, and sanitation in high-throughput baking operations.

Engineered for both high-volume and high-speed operations, the extruder can function as a standalone unit or seamlessly integrate with downstream ovens, delivering exceptional flexibility, productivity, and hygiene.

Designed from customer feedback, the Bake Extruder accommodates a spectrum of production techniques—from wirecut and co-extruded to filled and continuous-extruded formats—enabling manufacturers to create cookies, bars, and biscuits with varied textures, fillings, and inclusions. Its modular architecture features interchangeable dies, cutting heads, and a redesigned wirecut mechanism capable of up to 350 strokes per minute across a 1,700 mm width. Depending on the product, it achieves up to 130 encapsulated-cookie cuts or 250 continuous-extrusion cuts per minute.

Powered by brushless motors and servo-driven axes, the system grants fine-tuned control over extrusion rates and cutting precision, ensuring uniform size and shape in high-throughput environments. Optional lobe pumps—ideal for aerated or inclusion-rich doughs—provide gentle, accurate dosing to preserve product integrity.

Operator convenience and food-safe sanitation are built in: a new HMI with multi-level access and ERP connectivity simplifies recipe management and predictive maintenance, while an open-head design, removable hopper, photoelectric safety barriers, and accessible stainless-steel components enable rapid, compliant cleaning.
