Delvo Cheese CT-Light enhances the texture and taste of low-fat cheese while giving the sensation of a full-fat product. Delvo Cheese CT-Taste culture enables a reduction of the ripening time while maintaining shelf-life, taste and cheese texture.

DSM will also highlight its range of white cheese cultures to address consumer demand for a milder and fresher flavor of white cheeses, such as Feta. These cultures come as part of DSM’s total solution, along with enzymes and technical support, to improve not just the taste, but also the affordability and shelf-life of white cheese.

In addition, DSM will highlight the increasing consumer demand for healthier fresh dairy, such as protein-rich quark and sugar-reduced yogurt. DSM will bring its expertise to the show and advise quark producers on how they can address consumer demands for smoother, creamier quark with a mild flavor using the new Delvo®Fresh range of quark cultures, which also contribute to faster and more efficient quark production. The combination of Maxilact® lactase and Delvo®Yog FVV-122 can reduce the amount of added sugar in flavored yogurt and flavored milk, while retaining the natural sweet taste, flavor and texture that consumers demand.
